Protein Balls served at our Charity Ride for Breast Cancer

Amy's homemade No-Bake Protein Balls were a hit at our Charity Ride for The Healing Consciousness Foundation, which offers educational programs and healing methods such as massage, Reke and yoga to breast cancer patients.  It was a fun night - and the protein snacks were a welcome treat after the ride!    Here's the recipe:

No-Bake Protein Balls:

·         1 cup dry old fashioned oatmeal

·         ½ C. unsweetened coconut flakes

·         ½ cup peanut butter or almond butter (I used a combination of both)

·         ½ cup vanilla whey protein powder (or you can use ground flaxseed)

·         ⅓ cup agave (or honey)

·         1/2 cup mini chocolate chips

·         1 teaspoon vanilla extract

·         ½ tsp cinnamon

Roll into small balls.  Refrigerate – I think they are better a little chilled.  Can be served cold or at room temperature.
